20. A Touch of Paris Onion Chicken Casserole

The sweetness of the caramelized onions makes all the difference in this dish.

Ingredients

50g butter

1kg chicken thighs

250g bacon slices

600ml chicken stock

200ml white wine

6 tbsp crème Fraiche

4 tbsp corn starch slurry

2 tbsp yellow grainy mustard

Fresh tarragon

3 cups of onion chopped

1 tbsp oil

Method

Caramelize 2 cups of onion in 1 tbsp of oil until soft and brown

Season the chicken and brown in half of the butter until brown

Set aside and render the bacon slices; set that aside too

In the same pan, sauté the remaining onion, add the chicken, caramelize onion, stock, wine, and crème

Stir and pour into a casserole dish with the slurry

Cook in the oven until sauce is thick and bubbly
